Farm Itsas Mendi
Maryse and Patxi's orchard, located in Saint-Pée-sur-Nivelle, is full of fruits creating a fireworks display of a thousand colors: cherries, vine peaches, apples, pears, figs, nectarines, plums and apricots. All these fruits are transformed into jams to delight gourmets!

Close your eyes for a moment and imagine green hills barely veiled in a light morning mist. It is in this haven of peace, on the road to the Sare caves, that Maïder and Sébastien raise their herds of dairy cows and sheep for the manufacture of yogurts at the Xalarriko Borda farm.

With a flock of 260 local breed “manex tête rousse” dairy ewes, Mirentxu and Benat’s days are busy. They transform part of the milk produced into cheeses and sheep's curds (gaztanbera or mamia) on site at Maison Olatxarea in Ainhoa.

Jérôme, a harvesting beekeeper based in Saint-Pée-sur-Nivelle, works in close collaboration with tens of thousands of bees whose hives are located in Saint-Pée-sur-Nivelle, Sare, Souraïde, Ustaritz and Ainhoa. The quality of life of its bees allows it to obtain tasty honeys with “local” accents.

For a breakfast that reminds you of your childhood, Maison Miguelgorry in Saint-Pée-sur-Nivelle presents Basquella. With a chocolate and hazelnut flavor without palm oil and made in the Basque Country, this spread delicately spread on a slice of fresh bread will enchant your day.

Estebe, from Maison Bidegaina in Souraïde, represents the 3rd generation of distributors of Organic Extra Fresh Free-range eggs. He works in collaboration with several breeders in the Basque Country.

Who doesn't know the famous "Piment d'Espelette"? This world-famous spice has become a staple of local gastronomy and is readily available on the tables of the most renowned chefs. Stéphanie, 4th generation of the Xabatenetik family farm in Saint-Pée-sur-Nivelle, produces chili powder according to the AOP quality charter.

Based in Sare, Aitor and Ana sell products made from wool (duvets, cushions, decorative products, bags, etc.) and the idea came to them to make key rings with wool yarn from Manex sheep.
